Traveling Through Taste: Cultural Fusion Restaurants

For as long as humans have been traveling and interacting with each other, we have been fusing and innovating our cuisines through cultural exchange, trade, and commerce. In many cases, the crops commonly used in certain cuisines didn’t originate in those same regions. For example, potatoes often appear throughout traditional Irish cuisine, but they are originally from Peru, meaning that the crop was introduced to Europe through colonial exchange. The Cajun and Creole cuisines we know today, both commonly enjoyed in the American state of Louisiana, resulted from generations of colonialism. These cuisines combine African, European, and Indigenous American ingredients and flavors.

Nowadays, cultural fusion restaurants have become quite popular worldwide. Even though fusion food is nothing new, having entire restaurants dedicated to all the possible cuisine combinations is considered a modern trend in the food and restaurant industries. These restaurants delight their diners with unique concepts and creative dishes that blend the recipes, ingredients, and cooking styles of two or more cultures. Given that the planet’s food is as diverse as its people, cultural cuisine fusion can take on countless forms, with some restaurants combining the cuisines of multiple countries and multiple continents.

With so many cultural fusion restaurants in operation globally, it’s hard to list them all in one place, so here are a few:

Kogi Taqueria: Kogi Korean BBQ is a food truck chain in Los Angeles that serves Korean-Mexican fusion dishes. The company came to life during the Great Recession and revolutionized the food truck industry. After the massive success of the food trucks, the owners were able to open Kogi Taqueria, a brick-and-mortar restaurant which also serves Korean-Mexican dishes. Menu items at Kogi Taqueria include kimchi quesadillas, spicy pork tacos, Kogi Dogs, and more.

Hav & Mar: In 2022, world-renowned celebrity chef Marcus Samuelsson opened Hav & Mar, a New York City seafood restaurant that serves Swedish-Ethiopian fusion food, reflecting Chef Samuelsson’s own heritage. The menu includes a wide variety of seafood dishes, including salmon, tuna, bass, branzino, octopus, shellfish, and more, along with other dishes like gyoza and curry.

Fusion Restaurant: The Retreat, a luxury hotel in Rwanda’s capital city of Kigali, is the proud location of Fusion Restaurant, which was founded in 2018. Fusion Restaurant combines native Rwandan cuisine with various international cuisines, including Italian, Moroccan, and more. Fusion Restaurant’s dishes include falafel, Norwegian salmon, prawn bok choy, Rwandan beef, and more.
